Alphabetic inscriptions on an ancient stone slab (left) have been identified by a researcher as Hebrew and translated. A drawing of the slabs inscriptions (right) shows early Hebrew letters next to corresponding modern Hebrew letters (green). Inscriptions along the left edge of the slab translate as The one having been elevated is weary to forget. Inscriptions across the top translate as The overseer of minerals, Ahisemach.

It looks to me that the text is about a Texas Longhorns game and the official is signaling a touchdown.
According to the Bible, the Israelites lived in Goshen. If these texts were found in various places, they are likely to have been found in places where no Israelites were living.
Anyway, how can they tell Hebrew from Canaanite?

The modern letters shown here are not Hebrew. They are from the Aramaic block letters adopted by the scribes circa Jesus’ time or a bit earlier to replace the true Hebrew alphabet, which looks like a bunch of hens scratching the farmyard.
