The cheese is probably gotten from the milk to get the fat content down. Why is common cheese at the $5 to $6 a pound level, and cottage cheese at $3 to $4 level per pint when the suppliers can't sell it?
Let's see now, that's about $2 a pound for surplus cheese. Releasing it on the market would have driven the price down to a level that the people on WIC could have afforded it in the food mart.
I've heard that the dairymen are having a hard time making a living these days because people who want to be skinny won't drink milk. I guess the shoppers must be buying diet soda instead. Maybe that's on the WIC list, too.
