A solid core has very little to do with holding an atmosphere. Mars can be colonized, but the atmosphere would need regular maintenance due to losses to space.
My advice: Bring potatoes.

What is the gravitational field at ground level like on Mars? Would it not have adverse affects on human physiology over time? Like muscle atrophy, bone loss, circulatory weakening, etc.

A solid core has very little to do with holding an atmosphere. It does not create a magnetic field, though, so it lacks protection from some of the harmful solar radiation.
