IIRC, Jews are to be buried before sunset on the day of death, or possibly the next day. It goes back, one assumes, to biblical times and the rapidity within which bodies decompose. (I think Jews can’t be embalmed, either). A few other religions have adopted those death/burial rituals. Catholics couldn’t be cremated until the past few decades. All religions have some quirks about their departed.

Orthodox Jews cannot be embalmed, and must be buried within 24 hours of death. Technically they aren’t even supposed to be buried within a vault (the body is to return to the earth), so the vault is instead inverted and lowered over the coffin after entombment.
