Thai Steak Salad with Peanut-Lime Vinaigrette
Sear s/p lb skirt or flank steak in heated sprayed grill pan 2-3 min per side.
Liftout to plate; slice against grain on bias.
ASSEMBLY Layer on 4 plates 4 c chp red leaf lettuce; cup ea watercress
leaves/bean sprouts; steak slices, cup diced tomatoes/cucumber, 1/3 c chp
scallions; Dressing over.
SERVE topped w 1/4 cup chp dry roasted peanuts.
DRESSING Whisk cup prepared peanut sauce, 2 tbl lime juice.
Have you tried this version? I added a bit more vinegar to my taste. My husband really loves Popeyes’s chicken too.

I think the one I tried actually was a ‘Top Secret’ recipe; but maybe I just didn’t do it right. It didn’t seem close, to me. I will try it again some day.
