Eastern NC bbq is relatively healthy - for pork bbq that is. Its vinegar and pepper based, and both vinegars and hot peppers are good for you. Counter acts some of the fat in the meat (and added).

Ah! A heathen. Barbecue IS pork. Everything else is grilled X meat with sauce on it.
My second assignment in the Air Force was at Seymour Johnson AFB in Goldsboro, NC, in the heart of eastern Carolina BBQ country. In two years, I must have eaten my body weight in BBQ a couple of times over. In those days (luckily) I still had my metabolism and ran five miles a day, so at least I had a fighting chance to burn off some of those delicious calories.
Oddly enough, I’ve been in Virginia for the past decade and BBQ in the Old Dominion can’t even compare with eastern North Carolina.
