My second assignment in the Air Force was at Seymour Johnson AFB in Goldsboro, NC, in the heart of eastern Carolina BBQ country. In two years, I must have eaten my body weight in BBQ a couple of times over. In those days (luckily) I still had my metabolism and ran five miles a day, so at least I had a fighting chance to burn off some of those delicious calories.
Oddly enough, I’ve been in Virginia for the past decade and BBQ in the Old Dominion can’t even compare with eastern North Carolina.
Any BBQ joint that dumps slaw on the top is not worthy of the name. Like putting ketchup on a hot dog. Sacrilege.
Not when I lived and ate in Atlanta.

I do believe that barbecue probably began with pork, but there’s nothing quite as good as a perfectly cooked brisket.
As a side dish, NOT on the meat. Some places in eastern Carolina put slaw on the meat, but the better ones—especially those in the PeeDee of South Carolina—do not.
However, something happens when you get west of I-95 and start finding BBQ places with a mustard-based sauce. Another abomination.
Right, slaw as a side is cool, literally, with Bar-b-que.
Assuming it’s still the same one, Lexington NC might be right. It was the 80s after all. I remember it was great vinegar based stuff.
The one and only. However, I always told them to hold the slaw on my sandwich and serve it on the side. God did not mean for us to eat BBQ beneath a mountain of cabbage.
My favorite BBQ joint of all time was Country Cousins in Scranton, SC. Great pulled pork and the best vinegar-based sauce I ever had. Never saw them serve a sandwich with slaw on the meat. Great ribs, and their pork cracklins were terrific as well.

You’re probably one of those people that like boiled peanuts too.
To me, more than half the flavor is the sauce.
