My butcher sells ground bison.....when I grill [sear on high 500*] at home...it’s served with with lots of seasoned salt, and sauteed mushrooms and onions.
A good hearty bun that doesn’t fall apart, is critical.

Yes, I’m surprised they are not selling tags for $1,000 a pop. That’s what, a cool million? Oh wait that makes too much sense.
Our nearest neighbor raises Bison. OMG, are those things HUGE! It takes 5 years to raise one. I can’t imagine all the hay, grass and grain and water one of those suckers can consume each and every day.
He gets top dollar for the meat, though. The calves are ADORABLE - but what kind of baby isn’t? ;)
