Rather than rebut the media, let's just post the actual words of Donald Trump, so everyone can compare what the media says versus what Donald Trump actually said.
About Iowa Voters:
Trump is talking about Carson's story of stabbing his friend. He relates what Carson has written about lunging with a knife to stab his friend when lo and behold it hits the friend's belt instead... and then: "He plunged it (the knife) into the belt, and amazingly the belt stay totally (fine?), and the knife broke --- how stupid are the people of Iowa, how stupid are the people of the country, to believe this crap..."
Contrast that with the media meme: "Trump called the voters of Iowa stupid." As you can see from above, he was talking about Carson's story being unbelievable that the knife hit a belt and it broke the knife.

Or do you think he was using a common expression “how stupid are we to believe such crap”.

Bigger question Is why is Trump even talking about belt buckles and knives?
When you take a step back, you can see Trump's strategy more clearly.
He knows he is not only running against his fellow candidates but also against the media. So he gives the media just enough information that they cannot help but smear him. By now, the voters can see what the media is doing (Trump has pushed the meme for a long time that we need to be on the look out for such) and when the media smears Trump, the voters hold it not against Trump but against the media...and Trump wins another round.
Secondly, Trump's strategy against his fellow candidates is to hang "anchors" around their necks so that when voters think of them, the anchor comes to mind.

What he is doing with Carson is using Carson's own book to anchor him with "pathological (hidden) anger" and/or "liar."
Isn’t there some question that this “Bob” that he tried to stab was first a friend, and then later became a family member of some sort? Like the story just keeps evolving?

As Trump points out, he’s quoting Carson in Carson’s own book. Carson calls it pathological in his book. Trump is simply repeating what Carson wrote.
He’s a New Yorker. That’s how they talk. I am not sure it will work for an Iowa audience, but who knows. I don’t see it as a big deal. It is part of his personality.

You are wrong about Trump only caring about himself. There are many cases where he quietly helped others and with no benefit to himself. Don’t you know about these?

Yes, some Iowa voters are stupid. Then again, the idea that a bunch of local political kaffeeklatches are somehow a key decider in who will be the candidate is ridiculous. We’re all stupid if we assign that much credibility to a localized, non-binding political contrivance like a caucus. All primaries should be set on the same day with only those registered with the party and on the rolls allowed to vote. I don’t care how the democrats do it.
I don’t believe that MNJohnnie is stupid enough to believe that Trump was saying “Iowans are Stupid”.

Trump is a man. He is not God. He is not perfect. He is going to make mistakes. This is a mistake.
