But why do you think we'd see it every time someone has sex? I assume Maggie and Glenn, and the two previously mentioned are having it whenever they want, but it doesn't have to be documented. Agreed. I also don't think there's any mystery about Carol and Daryl--they've been together. We just haven't seen it (I don't want to, lol)
There was a scene last season, just after Rick cleaned up in Alexandria, and Carol all but told Daryl he could use a bath too. They're practically married :)

I want to see some sign that they’re together...even if it’s just the two of them coming out of the same room in the morning. Something. I’ve waited since the second season for it, LOL.
But I don’t want or need big sappy romantic scenes between them; it would be out of character for both of them.
