So they have a leg ready for transplant, and instead of rushing it to the patient, they take a break to eat?

And —as noted — does anyone actually do leg transplants?

Is there something about this story that needs more details?

They could use the arteries and veins for vascular repairs and the ligaments and tendons (ACL, PCL, MCL, achilles tendon, etc). There are various uses for bone, bone marrow, and skin. It would all require processing, so delivery of a leg is not a time critical issue as it would be for a heart or liver.
