I had leftover grilled chicken for lunch today myself. I also roasted some beets last night which I am looking forward to having on my salad this evening. I LOVE beets and wasn’t able to have them on the IP diet for the last year. last week xshub ran into someone whom we know who has also lost weight on the IP diet, 50 lbs, as a matter of fact.

You’re right-it is surreal, and getting more so-I can’t decide whether those otherwise conservative people in the Trump tank are there because they have been drinking his koolaid, or because they are enjoying the show so much that they aren’t thinking about much else.
Having been an unrepentant rebel since I was 14, I’m definitely enjoying the show and establishment shakeup, but I don’t think he has what it takes to pull us out of that rabbit hole-but Trump certainly has enough green to spread around, and that is like a drug to a lot of people, speaking of Alice and rabbits...

That is a lot of weight-I’ll bet that person feels great again, increased stamina, etc.
I’ve had people tell me for years that I should be eating more grains/carbs and less meat, or I was going to be sick, blah, blah-all while I remain at my same weight since I was 17 have plenty of energy and can work a physical job while the food pyramid followers are overweight, have knee joints going to hell, and can barely manage 30 hours at a desk in the A/C.
It is so nice to see that many nutritionists have finally taken a hard look at sugar, starches and processed foods and come to a logical conclusion-it isn’t healthy stuff to eat.
You mentioned roasting beets-I assume you mean fresh ones-I very seldom see fresh beets at the nearest grocery store-or even at the nearest large chain market in the next county. They were not grown in the garden when I was a kid, but my mom and aunts used to get pickled small ones from someone, which were tasty. I never cooked them until I married MrT5-he was from WA state, where apparently they are eaten all the time-I had trouble finding some fresh ones to cook-I boiled them and served them seasoned with butter and Mrs. Dash-he liked them that way, but I didn’t think they had much of a taste-like a potato with no sour cream or chives.
How do you roast them-and what seasonings do you use? I’m always interested in a new way to cook a veggie...
