I have made this point before. The new rules have changed school cooks into school defrosters. Because the federal rules require strict adherence to things such as fat/sodium grams per serving, schools have to basically buy prepared lunch and breakfast items. The school-food distribution companies do all of the measuring and paperwork to allow compliance. Some things can be tasty (eg breakfast pizza) and some rather tasteless (eg lunch pizza).
Most public schools have contracts with food distributors who are making good money by following the rules and producing food that gets thrown away. I am sure that someone who follows the money trail will find lots of hands on the local, state and national levels skimming money off of this deal.
What happened to the lib panic over the supposed running out of landfill space? (I know that was 10-15 crises ago, but try to remember).
