Rather, they’d double down and claim it a victory against Christians, claiming them to be hypocrites. These really are those with the totalitarian mindset that people like Aleksandr Solzhenitsyn spoke of.

It works pretty well within the Alinsky rule of making the other side play by its own rulebook.
Now, I'm not a lawyer, but I do have a pretty decent background in business law from a business perspective. This WILL draw lawsuits. But, unlike those based on conscience/religious freedom the defendant would be on much more solid ground (so long as they were absolutely consistent in the application of their policy, regardless of heterosexual or homosexual couples) and an outcome against the business being sued would have far, far-reaching consequences across ALL businesses. Ones that I believe the courts would want to stay away from.
