The more "authentic" Mexican food you can find in immigrant neighborhoods is shall we say probably NOT to an American's tastes.

Menudo, usually made with tripe.

Beef tongue tacos.

"Face meat" burritos. "Boop, you haven't lived until you've had tacos de cabeza!"

Gross. No thank you.

I once ordered a beef burrito and got lengua (tongue) by mistake. Not bad, but I wouldn’t order it again.

OTOH, birra (goat stew) is excellent!

Back in the nineties, I worked in Mexico for about a year and a half, and ate lots of authentic Mexican food. Tried all of the dishes you mention and many more. (Real posole has pig parts in it that even veterinarians don’t know about.) I liked pretty much everything.
