I actually have seen a setting solar eclipse... I was in New Mexico in May of 2012 for work and there was an annular solar eclipse as the sun was setting. Sadly the cell phone photos I have did it no justice. It had just past the maximum eclipse and as the sun set it resembled 2 horns sticking above the horizon. I went and sat on the sand dunes south of Jal for the whole thing... makes one feel quite small in the universe.

I live about 35 miles from where you were and watched it too. Unfortunately I was in town and didn't have a good view of the horizon but there were some great pictures taken in the local area. One I have seen has the eclipse and orange cast backlighting a couple pumpjacks and an excavator, probably somewhere around Maljamar or Loco Hills, a great photo with lots of color and contrast.
