I haven't spent enough time in the South but an old friend of mine was from Smith County, Mississippi and he and I drove down (from near the Canadian border) a couple times just to hang out for a week or two.
Basically I learned to keep my trap shut when it came to opining about regional habits, differences, and oddities; and to open wide when it came to the astonishing back-country food.
My first bite of Junior's barbequed ribs, about ten miles outside Oxford, was an epiphany, like the first time I had ever actually tasted food.
