You sound like my daughter who is also in SA. Her garden was filled with Mel’s Mix. she has drip irrigation, and her garden was a total bust. Even her malabar spinach is failing.

All the nurseries have peppers, tomatoes, squash and cucumbers right now. Go for it. Here’s a Garden Calendar with Planting Dates for SA

Last year my garden had Mel’s Mix. This year I added compost. The “expert” told me to use mushroom compost.

If Mushrooms are a vegetable.......

Andy - buy some 3% rock phosphate (NOT Super or Triple Super phosphate) and spread it across your beds. It'll force the plants to bloom and bear fruit. Also, check your soil pH. Much of the San Antonio and Hill Country area soil is high pH. You'll need to acidify it with soil sulphur. If pH is too high, the plants cannot absorb the nutrients they need.

My spring crop of beans, tomato's, and squash have petered out and I'll be re-planting them this week for the fall crop.
Leafy veggies like collards, kale, brussel sprouts, and rooting veggies like carrot and radish can go in the ground in October/early November time frame for a late winter/spring harvest. They prefer cooler weather.

Sock- your daughters Malabar spinach is failing??????? Mine is growing everywhere and I didn't plant any this year. It's all left over from last years crop. It's practically invasive. I've been selling a lot of it at the farmers market.
