The liver, which produces biochemicals that are necessary for digestion, also suffers. The glucose derived from rice remains in the liver without being converted into glycogen, and therefore starts a fight with the pancreas, which is the gland that produces enzymes to regulate blood sugar and fluids that help with digestion. Thus, not only is the stomach at risk but also the liver and kidneys and, ultimately, our bodies are the losers.the Saudi food experts have me confused. Are they saying it's rice itself that causes the problems or just when butter is added?

Eat as much rice as you want. The more oil and butter you use the better. It would be even better if they add 1/2 cup of sugar to each cup of rice.

Clarified butter, originally from India.

Ghee is clarified liquid butter. It’s pretty big in Indian cuisine as well.

My first recollection of the word was in the tale of “Little Black Sambo”.
Something about Sambo running around a tree, pursued by a tiger, and running so fast that the tiger eventually overheated and turned into ghee.
