You need to use commas to clearly convey your point. A comma after “yet”, would be a different meaning.

The overwhelming majority of famous pastry chefs were and are not gay, for that matter the overwhelming majority of famous Chefs are also heterosexual men. I don't know why people think otherwise. Being a Chef is (or used to be) a respected profession regardless of chosen sexuality. Being a pastry Chef requires the talent of an artist and the skill of Chef and while it might attract sociopathic narcissists (not that I'm bitter, she had her good points).
