Once opened..the buttermilk powder tends to dry rock hard...any suggestions?

If I understand what you are saying add dessicants to the can before re-closing.

Been there. I just scrape out what I need as needed. Ya might try putting some plastic wrap over it , then the lid and put a desiccant pouch or some rice inside. I never worried too much, figuring that it was gonna be mixed up in the batter. Are You keeping it in the fridge per label?
