Buy a side of pork belly from your butcher and enjoy the decadence that is pig!

As I understand it, most bacon is cut from pork belly, but buying the actual product and butchering it yourself removes the nitrates and other preservatives used in the curing process.

I cut up my pork belly into lardons for salads or thick strips for breakfast on Saturday. It’s also delicious if marinated in a maple syrup, soy sauce, and ginger mixture, cut into small filets and baked. SO GOOD!

I remember when I was a kid we butchered a hog. My grandma rendered the fat for lard. The pieces of fat leftover were good eats.
