A nice pic of the latest sandwich rage---the Vietnamese Banh Mi. Light crispy baguette (not chewy rustic kind) is essential for encasing without overshadowing ing. Viet baguette made with rice and wheat flour makes for an airy crumb--at Viet or Chinese markets, Viet bakeries and delis, or make your own. Mexican bolillo roll works well as does regular baguette; avoid sourdough and overly crusty types.

The focal point may be room temp leftover grilled or roasted meat, thin slices steamed pâté (gio lua), or seared tofu. Purchased chicken liver pate, or German braunschweiger. Daikon and carrot pickle keep for days in fridge--can make banh mi whenever the spirit moves you.

PREP Half bread; remove inside crumb w/ fingers; crisp up in 325 deg oven. cool a min. Layer generously w/ mayo; drizzle w/ Maggi Seasoning sauce or soy sauce then fave meats or tofu, 3-4 thin seeded cucumber strips, 2-3 rough-chp cilantro sprigs, pickled veg, 3-4 thin jalapeño slices. Close sandwich, half crosswise for easy eating.
