Using mayonnaise in recipes when cooking adds flavor and makes the food more moist, or helps to keep it moist. Two of the ways to add this flavor and moisture in cooking are using it in cakes and adding it to chicken or fish. Using any cake recipe and adding mayonnaise to it makes the cake more moist, while affecting the flavor little. Topping fish or chicken with the mayonnaise keeps it moist, adds a little extra flavor and can add a crunchy topping, if broiled or if used with other ingredients.
