Not really, I guess, but it could be. It is just something I made up one evening when I was contemplating the pile of veggies I had on the countertop.
Start with 2 tbs of olive oil, 2 tbs of butter, onions, peppers and garlic. Then just throw in tomatoes (with juice) and whatever else you have on hand. Spam cut into cubes is surprisingly good too. Use Tony's cajun seasoning liberally!
