I need to eat my eggplant and peppers.
Are you making eggplant parmigiana sandwiches? Maybe eggplant lasagne (using thinly sliced eggplant in place of the noodles)? I like slicing the peppers into spears and dipping them into ranch dressing!
P.S. The refrigerator repair person is coming tomorrow A.M. The four-year-old expensive-but-not-as-expensive-as-it-could-have-been fridge stopped cooling. There are inconveniences, and then there are the things that are *really* important. I thank the Creator every day for giving me the blessing of proper priorities. Face is great blessing!
