This is why complex carbs are preferred over processed foods. White bread, white rice, pasta break down so quickly for that burst of energy (which is why runners carb load), but whole grains break down slower for a longer lasting release of energy and no sugar spike.
Fruits are also confusing - some are just sugar - I've always wondered why diabetics weren't put on a very low carb diet.

I've always wondered why diabetics weren't put on a very low carb diet. When I first learned I was diabetic, my company paid for me to go to training for diet and exercise education. We were instructed to be very aware of carbs, how to limit them, and which carbs (complex, fiber) were better for us. That training wasn't specific to me, but a general course taught at the local hospital for anyone with diabetes. Anyone truly diabetic and not watching the carbs is in for a painful lesson eventually.

Diabetics have high and lows with blood sugars the perfect food combos are proteins and complex carbohydrates, think glycemic load.
