The people living in modern day France in the 5th century BC were not French. They were the ancestors of the Irish, Scots, and Welsh combined with the ancestors of what would become victims of Julius Ceasar’s wrath.
Try making some of that mead sparkle. Just be sure to use punted champagne style bottles. I make one that uses about 12 pounds of honey and a couple of pounds of pure maple syrup.
Add some charging sugar before you bottle it in the punted bottles. Make sure you cage the corks. Then let it sit about a month or so.

There are many remains of Gallo-Roman architecture and culture throughout France, preserved in a magnificent fashion.

Exploring Roman ruins in France makes a great travel plan.
The Maison Carre in Nimes is a Roman temple in perfect condition.
The Colosseum in Arles is in much better condition than the one in Rome. It is still used for bullfights.
The Roman Bath complex in the middle of Paris is magnificently restored and the Musee Cluny is built around it.
