I remember to this day when I was in Copenhagen there was a bakery next to the hotel and I bought a Danish fresh out of the oven. Yum!!!
I also talked to a US Based Danish chef who said it was too much work to make the dough and he bought his from some place in Seattle

It is. I did good work with the filling. Not suprising. Less than happy with the first pass on the folding puff pastry (which was made correctly.... 3^6 or 3^7 layers). But I got over it. Sauces and compotes were my strong points in school. Breads were great... stuff with eggs in it? Maybe not so good except for breakfast.
