Albondigas (Mexican meatball) Soup

Saute in olive oil in a large pot:

1 diced white onion
2 bunches green onions, chopped
1-7 oz can chopped green chilies
1 tsp chopped garlic
1 tsp salt
1 tsp cumin

Add 1 large can “fire roasted” broken tomatoes
and 1 quart water to pot and bring to boil.

Mix:

2 pounds lean hamburger
2 eggs
1/2 cup flour
salt, pepper, garlic powder to taste

Form into one-inch balls, added one
at a time to boiling soup.

Turn heat to low and simmer, covered.
Cook 45 minutes, then adjust seasonings.

Needs a bit more garlic and cumin for me (of course!)

Do you use regular white flour or masa flour?
