We use three fats for cooking...all are healthy.
Coconut Oil
Lard
Butter
Coconut Oil is very healthy. We use it for most everything in cooking. We use lard for pie crusts...makes the best and is healthy. Butter is good, a little mixed with coconut oil when frying eggs adds health taste. Butter itself is healthy.
The polyunsaturated fats, vegetable fats from corn oil, soybean oil, canola oil etc should never be used for anything.
Olive oil should not be used for cooking...it is ok for salads, or for dipping bread in.

Most of the nation of Italy would disagree with you. As would Deborah Krasner, whose book “The Flavors of Olive Oil” won a James Beard award a few years ago.
Olive oil is fine for cooking. You just have to be aware that it has a lower smoke point than most other common cooking oils, and pay attention to what you’re doing and not overheat it.
Olive oil most certainly can be used in cooking, mainly to saute or stir fry meat or veggies, etc. but not for long term deep frying

Just what I use - I also use grape seed oil - and I make ghee from my butter, making it even healthier - and no need for refrigeration, so spreads easily AND you can do a big batch at a time as it can stay good for 10+ years
