I used to run a burger bar down Texas way....d@mn good burger if I say so myself, had folks driving a long way for my burgers....when asked the secret, I would say, “never frozen ground beef, mustard on the meat side, and mayo on the “salad” side.....not to mention that beautiful FOX grill we had in the kitchen....I.E. never put mustard on the side of the patti with the lettuce and tomato....it’s called “presentation”, and believe you me, in the food business, there is a differnce....mustard next to lettuce and tomato is VERY unappetizing to many folks..in most cases, whereas mayo doesnt have a problem....mustard goes with pickles and onions....on the other side of the patti..
