Yuck.
Cook a couple of beets. I like to do it the the pressure cooker, but do it any way you like. When they’re cool, cut then up. Slice some red onions. Toss with plain rice vinegar. Let sit for a couple of minutes. Chop up some coriander. Sprinkle over the salad. Serve. Yum!
