Liver and Onions? Goodness, what memories that brings back! (And who could have memories about liver and onions, you ask.)

When my children lived at home, as a tradition for their birthday, they got to choose what ever they wanted for dinner.

My son *always* chose liver and onions. I would cook about a third pound of bacon and save the drippings, slice two onions, and brown them in the pan, drain and remove them, then brown the liver (dredged in flour).

When the liver was cooked, I would remove it from the pan, and add flour and cream, making a ‘roux’ or white sauce with the drippings. I would cut the liver into small pieces, and add to the ‘gravy’ - and serve it over steamed rice, onions on the side.

To this day (at age 46), that is still his favorite dinner.

Its something we don’t have often but I think its good for you occasionally. I used to fix it too, yorkie, and frankly I think what I fixed was much better than at the Cafeteria!
Yours is similar to what I fixed, except I just cut my liver into individual servings, etc. You don’t often find kids who like it early in life. You have a very smart son!!

I bet if you told your son about our little conversation, he would start craving it right now!
