Several years ago I started making a stir-fry version of ratatouille. Eggplant, summer squash, onion, peppers in olive oil from the garden with garlic and fresh herbs. Stir fry small pieces of everything

Add the tomatoes cut them in pieces and cook until the skin just pulls away from the pulp.

Sprinkle with grated Parmesan cheese.

I keep it in the refrigerator and serve it cold as a salad with grilled meat....

Oh, BTW, my kids nick named it “garden-garbage”

ROFL!!!!!!!!! I love it!!!!!

Thank your kids for giving me a great name for a summer fave in this household!!!!!

Another way I love to do it is wrapped in a double thickness of foil, either on the grill or in the oven. Add some small cubes of beef (or any meat) that have been marinated in your favorite vinaigrette and you've got a NO POT TO WASH dinner!!!!
