Can't speak for occurrences in other parts of the country, but native legend in NC at least, has it that these “bays” were burned into the ground; this survives in the place names in some instances. There's a certain logic to it, since they're all in areas with thick peat deposits.

We have a similar situation in Australia. For example, an impact crater dated several million years ago, is depicted in aboriginal art as having been created by a 'burning snake' that fell down from the sky...and the world became dark.
