On impulse at the store the other day, I picked up some sourdough starter. (When the nearest store is 2 hours away, I find I buy a lot more than I intend to since I don’t know when I’ll be back next. I’ll have to curb that impulse from now on!)

I figure if/when TSHTF yeast may become expensive and sourdough starter is a good way to keep yeast alive and available.

The directions were pretty intense. I’ve been working on this thing for 3 days now! The rising times are a lot longer than with conventional bread, and the just sitting around times that are so important to developing that sourdough taste are at least half a day for each time. But, It’s fun! Kinda like having a pet. It needs feeding and nurturing at least once a week.

The aroma out of my oven now is wonderful! I used the recipe on the starter packet, but will add in variations with some of granny’s recipes. I know there have been a ‘few’ posted throughout the almost 30,000 posts..... I just need to find the patience on dialup to find ‘em. I really want to try a whole wheat sourdough recipe next.

Does anyone know how to dry sourdough starter? I figure that’d be the best way to have a ready supply, in case my ‘mother sponge’ dies plus to give some to friends.

When I have it working, I just add it to all the things that i bake......except that with self rising flour, it was so light, that I couldn’t work it.

And when you get more than you want or think it has gone bad, I mixed it with buggy flour and fed it to the dogs and cats and all the poultry.

Of course it would be good in the hog food, for we kept the grain soaking in a barrel that used old milk for soaking it ......

Our pork was sweet and smelled good, Scott bought me some at the market last month and even after cooking, it stunk, made me think of an old boar hog, even the wild cats would not eat it on the front porch.

Pour them out a dish of sourdough and and watch, they loved it.

Sourdough keeps well in the refrigerator, but the temperatures to dry it is tricky as they are killed by fairly low temperatures - about 130 degrees I think.

I love it, but we don’t use it because it sets off wife and daughters allergies.

To extend your supply of regular yeast, you can take a small bit of regular bread yeast and culture it in the refrigerator, adding potato water and flower to it periodically as you use it. Give plenty away and if you contaminate yours, you can get a start back from your friends. That is similar how the old Fleishman’s blocks were used by many. Cut and wrap them and refrigerate and they will keep pretty well.
