When I started making cakes, they were all ‘layer’ cakes, LOL , always guaranteed to be a disaster, for the tops were never level.
So I went to catering class and learned to cut the hump off.
After I quit decorating the cakes, I used the removable bottom angel food cake pan and the 13” flat pan and never made another layer cake.
LOL, also learned to make pink elephants of cake icing and my bottle of champagne cake was popular for men, use 2 sheet cake pans, so it is high, [layers again] partially bury the bottle at an angle and make the pink elephants, makes a good mens birthday cake.
Meat loaf decorated like a cake, with mashed potatoes, was not popular with the men in my world, they did not accept that it was not cake icing on the meat loaf, as it looked like it might be.
