Those are the proper terms....OTOH some varieties are difficult to sex until they are mature....cross dressing and all;~)

Sometime you are not sure till they crow or lay an egg. We have two New Hampshire Reds that we were not sure of. Both are boys, but they get mounted like the girls. I have a couple of "confused" roosters.
They are fun to watch run around the farm. One of the reds was on the back porch eying the tomatoes, he was quickly removed. All in all the chickens have been good for the garden, for the most part they don't bother the plants when they have bugs.

We had just one broad-breasted white turkey that we got as a peep and we were told it was a hen. Later we went back to the same farmer to buy a second turkey from the same brood and again he picked the smallest one presuming (hoping) for a hen.

Well, when we introduced the new one to the original, the original pulled in his neck, poofed up all his chest feathers, fanned his tail and began strutting and dancing almost, showing off for the new one.
