I read through your piece. I only wish I had the space (and frankly the skill) to construct something like that. Although I’m in the Chicago area, so keeping things relatively cool isn’t usually an issue — the basement is ok.
I see you’ve got three batches going now? How do you go through that much beer? Are you running a small tavern in your garage?
