Walton has some great info on dehydrated foods here:

http://waltonfeed.com/old/self/deh-veg.html

Some great info for comparing nutrient values canned/frozen/dried is found here:

http://www.aaoobfoods.com/nutrientlosscomparison.htm

These compare one pound quantities, so canned and frozen are about 1/10th of dehydrated. Seems they hold their nutrients really well.

At dinner tonight I came up with another experiment to try... Why not mix veggie powder in whole wheat bread... A bit of peanut butter, honey and veggie bread - just about a complete diet.

Very good sites and the links are full of info. I DO know how to bookmark so you can be sure I have bookmarked both sites. After the fresh veggies have gone by in the garden, I struggle to get vegetables into my family (myself included), so I usually pay the high price to buy them fresh in the supermarket. Now, with all this info, I can think of lots of ways to incorporate healthy eating into our diet and I’m sure I will think of lots more. The bread, honey and peanut butter sounds just delicious. Thinking about omelets, casseroles, pancakes (with dried fruit) muffins and loads of other ways to get nutritious meals.
