Watermelon Rind Pickles

Have heard of these for years, but never tried any. How are they? Being frugal and all, it does seem a shame to throw out rinds when I have no horses nearby.

The ones I have had were GREAT!

Usually you will encounter it around Christmas and some have red and some green food coloring.

The consistency is about like a pear and the sweet/sour taste is nice and mellow.
