He said to boil the lids for 5 min. (do I have that right, DW?), dry them with paper towel and place on jars. Then put the rings on loose before placing in oven. I was going to do the same thing, open jars in oven, then try to put lids and rings on, but this worked great. Just tighten them up when you take them out and wait for the pings as they cool down. Try it, it’s good fun!

Well, I took my canner over to the extension service today to get the pressure gauge checked. They don’t have any equipment to do it. They were going to have to contact someone from Rockford, IL to see if they would come down at some point and have a day to check gauges. They will contact me or the other option was to give them my canner and if someone is going up to Rockford to take it with them. It looks like I also have to find a new gasket. Mine seems to be larger than the pot. So glad I’m checking this out now so I have time to solve the problems before I need to be using the canner.

Actually, I am surprised at how much enjoyment I am getting from planning what to store, searching for sources, and especially buying the jars and buying the dry stuff to go inside them. They look so pretty, especially with a colorful bean or lentil and pea mixture. I guess that's why the area I had allocated for storage is getting out of hand! It's like an addition - I keep wanting to hoard more and more and more........somebody has to stop me!
