Apple Brown Betty

Ingredients: (serves 4)
2 cups soft brown breadcrumbs
50g unsalted butter, melted
3-4 Granny Smith apples, sliced
40ml (2 tbs) lemon juice
1 lemon, rind grated
3/4 cup brown sugar
1 tsp ground cinnamon

Method:
Preheat oven to 180°C.
Combine breadcrumbs and butter. Sprinkle apples with lemon juice and rind, sugar and cinnamon.

Layer half the apples in 4 ovenproof ramekins and cover with half the crumb mixture. Repeat.

Cover with foil and bake for 30 minutes. Uncover and bake for 20 minutes. Serve with cream or ice-cream.

Apple Betty - good stuff!

I 'bake' apples in the microwave for a quick and easy and oooooh-so-good warm dessert with ice cream. I use Gala Apples, a sprinkle of cinnamon and sugar and just a tiny bit of real butter.
