EASY BEEF RISSOLES
1 pound beef mince
1 large onion
1 squash (also called zucchini - a long green vegetable)
1 egg
1 lemon
1 teaspoon of curry powder
Grate the onion and squash. Sprinkle with salt, curry powder and lemon juice. Beat egg and add. Blend in beef mince, kneading with hands until all mixed. Shape into small rissoles. Fry on in pan with a little oil.
Serve with green salad to accompany.
LEMON AND GARLIC CHICKEN
1 chicken
2 lemons
Many cloves of garlic
Take one large free-range chicken. Skin, and cut into 4 or 8 pieces. Juice lemons. Grind garlic and salt with a pestle and mortar until it makes a paste. Add lemon juice. Pour the lemon and garlic marinade over the chicken, leave 6 or 12 hours.
Remove from marinade, but leave some lemon and garlic on. Place chicken pieces in a greased baking dish, and put in medium hot oven for two hours or so - until well cooked.
Serve with green salad.
