A friend made this for me and it was awesome. As she’s gf/sf/df, I know that it works out well even with adaptations. She actually made it at work in her office microwave and drove everyone crazy!

3 MINUTE MICROWAVE CHOCOLATE MUG CAKE
1 Coffee Mug
4 tablespoons gf flour
2 tablespoons sugar (or xylitol)
2 tablespoons baking cocoa
1 egg
3 tablespoons milk of your choice
3 tablespoons oil
3 tablespoons chocolate chips
Nuts
Few drops of vanilla
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again. Put your mug in the microwave and cook for 3 minutes on high. The cake will rise over the top of the mug, maybe several inches, but don’t be alarmed! It shouldn’t spill over and will simply settle back down after you allow to cool a little. Tip out onto a plate if desired. NOW EAT IT!

Sounds great. Though I might try baking it on top of my stove in a cast iron skillet with lid. Thanks!
