Were cheating and doing Adeste Fideles in Latin :-).
Given the Latin origin of Spanish and our preponderance of loan words, I wouldn't exactly call that "cheating." You've just chosen a hymn in a language that no one speaks, instead of one that some do speak. Adeste Fidelis in Latinum is a good traditional classic. One can't go wrong with that during the Christmas season.
I still don't get it: The church calendar says "Christmas," but I haven't gotten any presents since the 25th. What gives?

"You've just chosen a hymn in a language that no one speaks, instead of one that some do speak." Oh, I'm sure there will be a few Latin Americans there.

A friend, a former member of the White Fathers in North Africa, once related a situation at a train station in Europe in which he and somebody else (I forget who was lost) discovered that Latin was the only language they had in common.

The church calendar says "Christmas," but I haven't gotten any presents since the 25th. What gives? The better question would be "Who gives?" I'm still getting presents! My new washer will arrive tomorrow; I need to call Best Buy and find out what time!
We're being Historical, doing a song in Latin. It has the great benefit of having the melody written with the Latin words, so the words fit the notes! In English Christmas songs translated into Spanish, the Spanish versions have teeming fribbles of syllables that are absolutely exhausting.
