We've been using an electric. They're more limited in size, but that shouldn't be a problem for you.

They get hot, but not unreasonably so, and there's no flame to worry about. You might like it.

The big question is what to do with all the peanut oil afterwards. (Your truck isn't a diesel, by any chance?)

No, my truck is combustion, but I have a friend with a diesel. ;o]

I’ll check into the electric fryers in January or February. Maybe I can afford one, then. :o])
