You may be surprised by the A/C in India. A lot of people are addicted to it, and most places have huge ceiling fans so you can go from "Breeze" to "Hurricane" in a heartbeat!
Try the local produce, too, (washed well!) and don't forget to eat some ice cream. I also think you will find most signs are bi-lingual, as well. (Just don't take any tours of the butcher "shops."
My hosts say that A/C has gone from being a luxury to a necessity in India (that being why I will be there, my industry is closely related).

I'm not much on sweets as a rule. Is the ice cream something exceptional? (If it's like Persian faludeh I will have to try some!) Generally, though, I gather my hosts will be there 24/7 -- just as they were in P.R.China.
