Good to see you back, carlo! It's too late tonight, but I'm going to add my KNOCK DOWN DEAD "Coke Salad" recipe tomorrow. It's a light, sweet gelatin salad with just a little punch. Our family loves it more than cranberries as a side dish and it's become a tradition.

COKE SALAD (in place of cranberry sauce)
1 pkg rasperry gelatin
1 pkg cherry gelatin
1 can seedless white cherries
1 lg can crushed pineapple
1 C pecans
1 8-ounce package cream cheese (frozen)
2 Coca-Colas (two 12 oz/small), partially frozen
Dissolve gelatin in juices (heated) from cherries and pineapple. Then add cokes, cherries, pineapple and nuts. Pour into mold, place in refrigerator to congeal. When it's turned out of mold and ready to serve, grate frozen cream cheese over top of mold (gives the appearannce of snow). The "frozen cokes" make congealing faster.
Serves 10.
Whenever this dish is eaten for the first time, people will go crazy for the recipe. I guarantee it will become the hit of the meal!
